I made these yesterday right when I got out of bed to have for breakfast. OMG, with a little butter and jam on top... they were heavenly! Not only that but,
they were very easy and only took about 10 min to throw together!
2 cups all-purpose flour
2 1/4 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/3 cup shortening
3/4 cup buttermilk
1 stick of butter, melted and divided in half
In a large bowl, combine the dry ingredients. Cut in shortening until mixture resembles coarse crumbs. Stir in buttermilk and half of the melted butter just until moistened. Turn onto a lightly floured surface. Flatten with floured hands 3/4in thick; cut with a floured 2-1/2in. to 3in. biscuit cutter. Place 1 in. apart on an ungreased baking sheet. Bake at 450 degrees F for 8-10 minutes or until golden brown. Remove from oven and brush with remaining melted butter. Serve warm.
